Apple Whoopie Pies

My sister has a pumpkin whoopie pie recipe that I made and fell in love with so I decided to try to make an Apple Whoopie Pie.

I didn't follow my sister's recipe so I'm sharing my edits to her recipe as well as her recipe.

Shelley's Pumpkin Whoopie Pies

2 c pumpkin

2 c brown sugar

1 cup oil

2 eggs

1 tsp vanilla

3 c flour

1 tsp salt

1 tsp baking soda

1 tsp baking powder

2 tsp cinnamon

2 tsp cloves

2 tsp ginger

Shelley's Filling

1 c shortening

2 c powdered sugar

2 tsp vanilla

2 tbsp flour

2 tbsp milk

Apple Whoopie Pies

2 c unsweetened applesauce

2 c brown sugar

1 c shortening, butter, oil of your choice

2 eggs

1 tsp vanilla

3 c flour

1 tsp salt

1 tsp baking soda

1 tsp baking powder

2 tsp cinnamon

2 tsp cloves

2 tsp ginger

Add 1/2 to 1 c flour if dough is too soft.

JG's Filling

1 8oz pkg cream cheese

1 c butter

2 c powdered sugar

2 tsp cinnamon

2 tsp vanilla

Optional: 1/2 c unsweetened applesauce or shredded apples

Use Shelley's or JG's filling above.

Mix and bake at 350 for 8-10 minutes.

Both recipes are moist and delicious without filling, but just as good with the filling or ice cream. Your choice. Whipped cream would be good too!

Tip: peaches, raspberries, ginger, papaya are all different flavors to replace the pumpkin/applesauce and keep the spices. Mash or shred the fruit/root to match fruit texture with pumpkin.

Coming Up: I'm rearranging this recipe to create pie style Whoopie Cookies. Lemon, Lime, Chocolate, Coconut, Banana, Pecan, Strawberry, Cheesecake, etc.
